Roasted Garlic Tomatoes

There’s something magical about roasted garlic tomatoes—the way the oven transforms simple ingredients into something deeply savory, sweet and comforting. As the tomatoes blister and caramelize, the garlic softens into a mellow richness that fills the kitchen with the kind of aroma that makes everyone wander in asking, “What’s cooking?” This recipe is effortless, endlessly versatile and perfect for spooning over pasta, spreading on crusty bread or serving alongside your favorite cozy meals.

Ingredients:

  • 1 pint cherry tomatoes

  • 2 cloves of garlic

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 2 oz grated parmesan cheese, optional

Directions:

  1. Preheat oven to 400°F.

  2. Take a glass baking dish, I typically use a pie dish, and pour clean tomatoes into it.

  3. Sprinkle tomatoes with salt and toss with olive oil.

  4. Smash the two garlic cloves, you don’t have to remove the shell unless you plan on eating the garlic, and add to baking dish.

  5. Once oven is preheated, bake for about 30 minutes until tomatoes are blistering. Shake baking pan halfway through.

  6. When tomatoes are done, sprinkle cheese on top if you want to. Serve as a side dish, on your favorite pasta or pizza, on crusty bread or however you want to enjoy them! Check out my Crispy Pepperoni Pizza recipe to see these tomatoes in action.
